Recently I have been seeing so many great Indian Fusion Bloggers pop up all over.

It’s so much fun to see what other people are doing with our cuisine and how they are bringing it to America.

One of the recipes that gets brought up a lot is the Bombay Sandwich.

The last time I went to India, in 2013, I had this sandwich for the fist time off a cart on the street.

This Bombay sandwich, made with spicy cilantro chutney, boiled potatoes, onions, tomatoes and beets is topped with lots and lots of Masālā and then grilled.

I decided to do my own twist on it by making it with naan instead of white bread.

I made my own version of the sandwich Masālā by toasting whole spices and grinding down.

The best part of the Bombay sandwich to me is the spicy chutney and the boiler potatoes.

I like to add a little cheese to make it all come together!

Naan Bombay Sandwiches
Bombay street sandwiches made with a twist using naan bread, cheddar cheese and spicy cilantro chutney
Servings
Ingredients
Sandwich masala
  • 2 tbsp. cumin seeds
  • ½ tsp. cloves
  • ½ inch cinnamon stick
  • 1 tsp. black peppercorns
  • 1 tsp. fennel seeds
  • 1 tsp. black salt
  • ½ tsp. amchur powder dried mango powder
For chutney
  • 1 cup mint leaves
  • 1 cup cilantro
  • 2-3 green chilies
  • ¼ inch ginger
  • ¼ tsp. black salt
  • ½ tsp. Chaat masala
  • 1 ½ tsp. lemon juice
For naan sandwiches recipe
  • 6 slices naan
  • 2 potatoes boiled and sliced
  • 1 cucumber sliced
  • 1 onion sliced
  • ½ green bell pepper sliced
  • 2 tomatoes sliced
  • 6 cheddar cheese slices
  • butter

Instructions
For the sandwich masala
  1. Dry roast the whole spices for masala on medium-low heat with stirring constantly.
  2. Once cooled grind with black salt and amchur powder. Set aside.
For the chutney
  1. Add all chutney ingredients in blender with a little water and blend into a puree. Keeping slightly chunky.
Build the naan sandwich
  1. Heat the grill pan on medium heat. While it is heating assemble the sandwich.
  2. Take 1 slices of naan and cut into 3 equal pieces. Spread butter and chutney on each slice.
  3. Add the vegetables in this order: potato, cucumber, onion, second naan slice, bell pepper, tomato, cheese. Sprinkle each layer with sandwich masala.
  4. Place the sandwich carefully on the grill pan and grill until it is crispy and golden brown.
  5. Flip and grill the other side.
  6. Serve warm

I’ve been vegetarian for over 20 years and I love Indian Cuisine. The spices really blend well together perfectly.
