Childhood meet adulthood. Adulthood, meet childhood.
This Chocolate Chai Pudding Pie w/ Parle-G Crust literally gives me all the feels!
When I was a kid, I used to dip my Parle-G cookies into a piping hot cup of fresh masala chai.
When the chai was that hot the cookie would just fall apart into the tea and when I was done drinking it there would be a cookie surprise at the bottom of each cup.
Parle-G cookies have an iconic yellow wrapper with a little girl on the cover and are known as India’s “gluco-cookies,” which is just a fancy way to slightly sweet cookie.
The cookies remind me of graham crackers and are awesome for dunking into tea or milk.
I wanted to fuse my love for the cookies and tea with my forever love for chocolate.
When I was kid I never really liked chocolate pudding. It was a textural thing for me, but as I have gotten older my body takes chocolate in ANYWAY it can!
This was my first go around at making the pie, so the chocolate to whip cream ratio was a little off, but honestly, it really didn’t make a difference.
The chai REALLY comes through in this recipe, so when your fork hits the pie, you get an amazing combo of chai, chocolate, crunchy crust and of course, cinnamon whipped cream.
If you’re a total chocoholic I would recommend maybe using half the amount of whipped cream in this recipe.
This pie is great as a dessert for when you have guests over, or just good to have in the fridge for when that sweet tooth craving kicks in. J killed this pie in less than a week if that’s telling you something!
Ha.
Hope you enjoy!

- 2 tsp. chai masala
- 1 cup unsalted butter melted

- 4 ounces semisweet chocolate coarsely chopped

- Mix Parle-G crumbs with the chai masala and butter, then press into your pie pan to create a crust on the bottom. Freeze crust for 1 hour.
- Preheat the oven to 450ºF degrees and then bake for 10 minutes. Cool on a wire rack.
- Warm milk over medium heat until it reaches 180ºF degrees with loose leaf tea and chai masala. Once warmed, turn heat off and continue to let it steep for 5 minutes. Remove loose tea leaves and discard.
- Add chocolate to the milk mixture and stir until it is mostly melted. Add in sugar and salt.
- Slowly add 1 cup of the milk mixture to the egg yolks, stirring constantly.
- Slowly pour the egg mixture into the milk mixture, stirring continuously.
- Add in the cornstarch and whisk until smooth. Be sure there are no clumps stuck at the bottom.
- Heat the mixture over medium heat stirring continuously until the mixture thickens, about 3 minutes. Stir in the butter.
- Immediately pour the filling into the cooled cookie crust.
- Cover the filling with plastic wrap, making sure the plastic wrap is touching the filling to prevent a skin filming. Refrigerate for 1 hour or until firm.
- Spread the Cool Whip over the filling and dust lightly with cinnamon.
When I heated up the tea leaves in the milk, I added them to a tea steeper that I had. If you do not have one, add the leaves into a herbs sachet to let steep.

I have a sweet tooth so anything chocolate and sweet gets me salivating. This does look delicioso!
The mention of Parle-G brings back so many memories. There are so many types of biscuits out there now, but nothing can beat a parle-g soaked in chai at the bottom of the cup.
You get it!
