Pani Puri is one of my all-time favorite Indian street food snacks. The last time I went to India, 3 years ago, I can remember ordering it ever restaurant we went to

Pani, literally meaning, water, and Puri a small, fried, crisp dough ball have the perfect balance together. The pani, is generally a tangy, sometimes spicy water, balanced with a tamarind chutney. Both the water and the chutney are added in the puri alongside a main filling consisting of boiled potatoes and chickpeas.

The puris are made with wheat flour and are thin and crispy. When cooked they puff up to create the perfect nest for the filling. You can buy the puris ready-made, which can make the preparation of this dish much easier.

A common Indian street food. It consists of a round, hollow puri, fried crisp and filled with a mixture of flavored water, tamarind chutney, chili, chaat masala, potato, onion and chickpeas.

Ingredients
  1. 1 box ready-made puri
For the Pani
  1. ½ cup chopped mint leaves
  2. ¾ cup chopped cilantro
  3. 1 tsp fresh ginger
  4. 1 green chili (add more if you like it spicy)
  5. 1 tbsp tamarind
  6. 2 tsp sugar
  7. 1 tsp cumin
  8. 1tsp chaat masala
  9. 3 cups water (or to consistency)
  10. Black salt to taste
For The Stuffing
  1. 3 medium potatoes
  2. 1 cup chickpeas, cooked (canned or fresh)
  3. 2 tbsp chopped cilantro
  4. 1 small onion, finely chopped
  5. 1 tsp cumin
  6. 1 tsp chaat masala
  7. 1 tsp red chili powder
  8. Black salt to taste
Instructions
  1. Boil the potatoes until cooked, peel and chop.
  2. Mix potatoes, chickpeas, onions, cilantro, cumin, chaat masala, and black salt. Set aside.
The Pani
  1. In a blender add all the ingredients for the pani.
  2. Add tsp water and blend into a chutney. Makin sure it is smooth.
  3. Remove the chutney from the blender and place in large bowl.
  4. Add 3 cups water and mix.
  5. Check the seasoning and add more cumin, chaat and or water accordingly.
  6. Place in fridge to keep cool.
Assembling the Puri
  1. Crack the top of the puri with a spoon.
  2. Add 2-3 tsp of the potato-chickpea mixture, filling the puri.
  3. Stir the water and add as much as you would like to the puri.
  4. Serve and enjoy immediately!
Notes
  1. You can fill the puris with a variety of things to customize it as your own. Be sure to serve right away as the pani can leave the puri slightly soggy.
