Happy Monday beautiful people! 

Hope you had a wonderful weekend!

I got Saturday night off from work, so I went out with the girls and did some karaoking. (spelling? lol) 

Belt my little heart out to ‘No Scrubs‘. Such a classic older song. 

Am I right ladies?!

What did you do? Anything fun? 

anyways.

This Monday I am switching it up and adding a little meat to my usually “Meatless Monday.” 

It is good to change things every now and then! 

Ok, so, to be honest…there were a bunch of random things in the fridge and I needed to use them up. 

I had a packet of Al Fresco Sweet Apple Chicken Sausage, along with kale and spinach…I wasn’t quite sure what to make until I saw the Cannelloni Beans and a can of petite diced tomatoes, sitting in the pantry.

Sometimes the best meals come from a plethora of random ingredients laying around, ya know? 

I mixed all of those items up in a pan, along with some a little red onion, some garlic and other seasonings, and then boom! Easy, peasy, healthy dinner, ready to go in less than 30 minutes. Sweet Apple Sausage, Cannelloni Beans, Spinach and Kale

Yes. 

I just went Rachel Ray on you guys. 

There is a sweetness from the sausage in this dish, while the greens give it a beautiful color and the addition of red chili flakes gives the dish some heat. 

Pair this meal with a loaf of crusty french bread and eat up!

Ingredients
  • 1 tbsp. olive oil
  • 2 tsp. cumin powder
  • 2 tsp. red chili flake
  • 1/2 red onion diced
  • 2 cloves garlic diced
  • 1 package sweet apple sausage sliced
  • 1 can cannelloni Beans
  • 1 can petite diced tomatoes
  • 2 cups spinach
  • 1 cup kale chopped
  • salt and pepper to taste

  • 1 tbsp. olive oil
  • 2 tsp. cumin powder

  • 1 can petite diced tomatoes
  • 2 cups spinach
  • 1 cup kale chopped
  • salt and pepper to taste
Instructions
  1. In a pan, add olive oil. Once hot, saute onions for 4-5 minutes.
  2. Add garlic until fragrant.
  3. Add sausage and cook for 2-3 minutes per side, or until a golden brown.
  4. Add beans, tomatoes and all seasonings. Stir to combine.
  5. Continue to cook for an additional 5 minutes.
  6. Add spinach and kale. Stir until wilted.
  7. Serve with french bread or over rice.

This is my favorite sausage! (It’s Whole30 approved, which I’m not doing currently, but wanted to share)! haha. I have some in my fridge right now too, along with the spinach! I am not a fan of beans (of any kind, sadly, it’s a texture issue for me, weird I know), but this does look amazing! My husband would love it! Happy Monday dear! 🙂

I make something very similar but want to try your recipe. Adding the beans you can cut down on the meat and still get your protein. Love you adding the greens.
