I was nursing a Halloween hangover last week so I wasn’t able to share this very yummy Pork loin and Apples dish last Monday.

I told you all there was more apple goodness to come after the apple butter, here and apple bread, here posts.

Hello! It is still fall after all!

You guys are going to be SO blown away with how SIMPLE this recipe is. With only 7 ingredients, 1 pan and 25 minutes, you are on your way to a delicious and quick weeknight meal.

Ain’t nobody got time to slave over a stove all night.

Ok, so maybe you do. I do…but I love to cook so I carve out time for that.  

Anyways.

Apples and pork are the perfect combo. It’s all about the play on savory and sweet. The apples can be sweet and sometimes tart, while the pork is always robust with a full flavor.

That’s the best way I can describe it!

I like to start with a piece of pork loin that has been marinated in brown sugar, mustard and apple juice. The flavor is incredible plus I love the sticky remnants leftover in the pan. The best part is, all you have to do now is slice up some apples and throw them into the same pan as the pork, and boom! You have yourself a ONE PAN meal, which makes for easy clean-up, in a jiffy!

Pork Tenderloin and Baked Apples

One Pan Juicy Pork Tenderloin and Baked Apples
Servings
Ingredients
  • 1-1/2 lbs pork loin
  • 2 apples cored and sliced into wedges
  • 2 tbsp. garlic minced
  • 3 tbsp. mustard of choice I like Dijon or Spicy Brown
  • 3 tbsp. apple juice
  • ½ cup Brown sugar
  • 2 tbsp. olive oil
  • salt and pepper to taste

  • 1-1/2 lbs pork loin
  • 2 apples cored and sliced into wedges

  • 3 tbsp. apple juice
  • ½ cup Brown sugar
  • 2 tbsp. olive oil
  • salt and pepper to taste
Instructions
  1. Pat loin dry and season with salt and pepper.
  2. Heat pan over medium heat and add oil.
  3. In a bowl mix sugar, mustard, juice and garlic. Reserve ½ cup and rub the rest over loin.
  4. Preheat oven to 350 degrees and sear pork loin on all sides. With remainder marinade spread all over pork and place in oven for 10 minutes.
  5. Remove pan and add apples. Cook for 5 minutes. Flip apples and continue to cook pork for an additional 5 minutes.
  6. Check pork for readiness. Cook until done, with an internal temperature of a minimum 145 degrees.
  7. Remove from oven and let rest for 10 minutes.
  8. Slice and enjoy!
