Can you believe that it is almost March?! Like damn, where is this year going already?
How was your weekend?
J’s aunt was in town on Friday, and then it was my cousin’s birthday celebration on Saturday night. Overall it was a pretty chill, relaxing weekend + it rained all day Sunday so it was nice to be all cozy inside.
Over the last few weeks I have been on a baking kick!
I had never really considered myself a baker before, which made it so fun to explore this side of cooking.
Last week I shared with you the decadent Dark Chocolate, Orange and Chili Soufflé recipe and this week I am continuing with the SWEET theme, featuring a Salted Caramel and Chocolate Tarts!

I’m not going to lie, this tart does take some time to complete, however, it is totally worth it.
This tart is the PERFECT week night indulgence.
The crust is jazzed up with almonds and that extra salt I added to the warmed caramel makes these tarts.
Also, I feel like so many people think that making whipped cream at home is hard, but really it is so damn easy, plus I think it just tastes better when you make it with your own hands, you know?

- 2 1/4 cups all-purpose flour
- 1/4 cup almonds grinded into a powder
- 9 tbsp. cold butter
- 3/8 cup sugar
- 1 egg
- 1 tbsp. vanilla extract
- Pinch of salt
- 1 tbsp. butter melted
- 3/8 cup sugar
- 1/4 cup heavy cream
- 1 tsp. butter
- Sea Salt to taste
- 2 cups heavy cream
- 12 oz. dark chocolate
- 1 cup heavy cream cold
- 2 tbsp. sugar
- unsweetened cocoa powder for dusting

- In a food processor add ingredients for crust to form dough.
- Wrap the dough in plastic wrap, tight, and chill for 30 minutes.
- While dough is chilling prepare the tart tins. Brush the melted butter in each tart tin to prevent sticking.
- Remove chilled dough from fridge and tear off golf ball sized pieces and roll out dough and place in tin tarts. Be sure to follow the ridges of that tart tin and patch any holes as necessary.
- Place back in fridge, covered, for 30 minutes. While the dough chills, preheat oven to 375.
- Once chilled, prick the tart shell all over with a fork and bake for 25 minutes. Once browned and cooked and tins are cool enough to handle, transfer to a rack and let cool.
- Add 1 tbsp. of sugar to a saucepan and bring to a boil over medium heat. While that is coming to a boil, microwave the heavy cream until hot.
- Slowly begin to incorporate in the remaining sugar 1 tbsp. at a time, to the pan allowing it to look like amber in color.
- Remove pan from heat and whisk in the butter and hot cream. The mixture will begin to bubble. Once done bubbling pour caramel into cooled tart shell and let cool in the refrigerator for about an hour.
- While the caramel is cooling break the chocolate into pieces and put into a bowl. Bring the heavy cream to a boil over medium heat and pour over the chocolate pieces.
- Let the mixture sit for a few minutes and then stir until smooth and pour over the caramel and let cool for a minimum of 12 hours.
- When you are ready to eat the tarts just prepare the whipped cream by mixing the cream and sugar in an electric mixer until firm. Pipe the whipped cream on each tart and dust cocoa powder on top. Enjoy!
When baking the tarts, use something heavy like lentils and parchment paper to prevent the dough from puffing up too much. Add the sugar in a few tablespoons at a time to help prevent it from burning. By heating up the cream before adding it to the sugar, it will help regulate the texture so you don’t end up with one big caramel blob! Before placing the carameled tarts into the fridge top with extra salt crystals for that extra bite!

I do love this recipe. They look so cute and delicious. And I know I would love the tarts. Also, they don’t look too hard to make. I just wish my daughter loved caramel. I hope that changes someday.
