The weekends are heating up again with the start of FOOTBALL season.

I am a Packers fan, go pack go, and am a total outsider compared to the rest of my family who are all Seahawks fan….
Yeah….
Not going to get into any semantics or shit talking, well, at the moment, however I am open to some commentary at the bottom of this post if you have something to say. LOL.
Anyways….on to something positive.
FOOD.
More specifically, Lettuce Wraps!
Now I know game day food usually consists of wings and nachos, and dips (which I will be sharing recipes for in the upcoming weeks), but, like, can we do something lighter? The beer is already weighing me down.
In comes these super light, yet refreshingly delicious Lettuce Wraps.
I like to use ground turkey, but chicken or beef would go awesome with this recipe too.
Preferably, I am into a great Asian wrap…brings me back to my P.F. Chang’s day, but that’s another story for another time. Actually, that’s a lie, some stories have to be kept under wraps.
…I’m always going off on tangents.
In addition to the ground turkey I like to add a schomorgus board off veggies; carrots, corn, water chestnuts, onions…think of the lettuce wrap as holder for anything you want! There are no rules here.
Going along with the Asian theme, I like to add soy sauce, hoisin, rice vinegar and Chinese 5 spice to the whole mix!
Iceberg lettuce works best, but try experimenting with Romaine or Butter.
Serve these wraps up with a yummy dipping sauce and you are good to go!
You can serve these babies with just a napkin and no utensils for easy clean up. I mean could it get any better?

- 3 tbsp. hoisin sauce
- 2 tbsp. soy sauce
- 2 tbsp. rice wine vinegar
- 1 tbsp. Chinese five spice
- 1 tbsp. Sirracha
- 1 1/2 tsp. sesame oil
- 1 tsp. cornstarch
- 1 lb. ground turkey
- 2 tsp. vegetable oil
- 8 oz. mushrooms diced small
- 1 8 oz. can water chestnuts drained and chopped small
- 3 cloves garlic minced
- 1 inch piece ginger minced or grated
- 1/2 cup grated carrots
- 1/2 cup corn kernels frozen or fresh
- 1/2 cup sliced green onions
- 2 small heads Iceburg or Butter Lettuce torn into large pieces
- Red pepper flakes to taste
- Salt to taste

- In a small bowl add hoisin sauce, Sirracha, soy sauce, rice wine vinegar, sesame oil and cornstarch. Whisk to combine.
- Heat a teaspoon of oil in a pan over medium heat. Add turkey and Chinese Five Spice and cook until browned using the back of a wooden spoon to break apart. Remove from pan and set aside.
- Add a teaspoon of oil in the pan. Add garlic and ginger. Cook for 30 seconds. Add mushrooms, corn, carrots, chestnuts onions, red pepper flakes and salt. Stir to combine and cook until tender, 4 to 5 minutes.
- Add in turkey. Stir to combine.
- Add sauce from earlier to the turkey and veggie mixture. Continue to cook for 1 more minute.
- Serve in lettuce shells warm. Enjoy!
Notes: for extra dipping sauce, simply make more of the sauce listed in step 1. You can add garlic, ginger, green onions and red pepper flakes for that kick!

I love a quick affordable meal thats low carb and I love lettuce wraps so this is a winning recipe! I’m not much of a sports fan, but my sons are. I’m definitely here for switching up the wings and stuff for something lighter and this is a fun idea. thanks for sharing this recipe. Seems easy enough for me to make. May have to give this a go!
