The weekend flew by wayyy to fast. Can you believe there is only one more week left of January?!? CRAZY, right?

To recap the weekend it was pretty uneventful. Friday night date night at home with J and a bottle of wine. Kept it really low key on Saturday and followed Sunday up with a fundraiser event by friends called Act Natural. It was complete with DJ Sets, a dance floor and amazing humans.

Last week I shared my Chicken Tikka Masala Sliders recipe with you all! They are served with my creamy homemade Raita and freshly pickled red onions. I kind of left ya’ll hanging on the onion recipe last week so I am going full force into today.

Honestly. It’s SO simple. Too easy actually.

Quick Pickled Red Onions

Slice some red onions up SUPER thin, followed by a little sugar, apple cider vinegar, salt and you’re done!

Yeah, told ya it was easy.

The onions give a beautiful pink color as they oxidize in the vinegar bath. Also, I love the smell. Is that weird? The smell of vinegar?

Quick Pickled Red Onions

These pickled onions go with just about anything. I really love putting them over a spicy curry and rice. It gives a dish packed with heat a sour, tangy note that explodes on the palette while keeping your mouth cool.

Ingredients
  1. 1/2 cup apple cider vinegar
  2. 1 cup water
  3. 1 red onion, thinly sliced
  4. 1 tbsp. sugar
  5. 1 1/2 tsp. kosher salt
Instructions
  1. Whisk salt, sugar and vinegar in a bowl.
  2. Add 1 cup water until sugar and salt dissolve.
  3. Place onion in a mason jar or other airtight container.
  4. Pour vinegar mixture over.
  5. Let sit at room temperature for 1 hour.
  6. Cover and chill.
Notes
  1. Drain onions before using.
  2. The onions can be made 2 weeks in advance.
