Happy Monday friends!

Today we are going meatless and taking care of snack time with these yummy chickpea french fries.

These potato free fries are a healthier alternative to your typical fry.

I love fries. I mean, who doesn’t? I could eat them all the time and NOW I can.

Think polenta vibes with this recipe. The outside is super crunchy and then the inside is super creamy.

Indian recipes use chickpea flour in a lot of dishes like pancakes, chili paneer, bhajiya’s, sabzi...the list goes on, and is a healthier alternative to regular flour.  

Chickpea flour is packed with protein and other nutrients making it an obvious choice as an alternative!

Some recipes call for boiling water, but I found ice cold water works best to ensure that your batter does not have any lumps.

Chickpea Flour French Fries

Play around with your batter and add in fun seasonings. I added chili powder and cumin to mine, but some fresh herbs would be nice, or even Old Bay.

For the dipping sauce I used desi style whole milk yogurt, but feel free to use Greek yogurt or make an aioli.

Chickpea Fries
Crispy on the outside and creamy on the inside chickpea flour fries.
Servings
Ingredients
For the Fries
  • 4 cups cold water
  • 2 cups chickpea flour
  • 1 tbsp. salt
  • 2 tsp. cumin
  • 2 tsp. chili powder
  • 2 cups vegetable oil
  • lime juice for garnish
  • cilantro for garnish
Yogurt Dipping Sauce
  • 2/3 cup desi yogurt
  • 1 clove garlic minced
  • ½ tsp. Chaat masala
  • 1 ½ tbsp. mint chopped fine
  • 1 ½ tbsp. cilantro chopped fine
  • ½ lemon juiced
  • salt to taste
  • pepper to taste

Instructions
Chickpea Fries
  1. Add the cumin, chili powder, salt and chickpea flour into a bowl and mix until all incorporated. Pour in the water slowly while whisking until all of the water is absorbed and there are no lumps, about 2-3 minutes. You are looking for the consistency of polenta.
  2. Taste the mixture and add more salt and seasonings as needed.
  3. Line a baking sheet with wax paper or cling wrap and pour the chickpea mixture onto the baking sheet and spread evenly. Cover with cling wrap and put in the fridge for 30 minutes or until the batter is firm.
  4. Once firm, take a knife and cut the mixture into long rectangular pieces. If too long, cut the piece in half.
  5. Heat the vegetable oil over medium heat. Once heated to medium turn the heat to medium high. Once the oil is hot enough and sizzling add some fries and cook until they are golden brown and crispy on the outside. Keep working in batches until all fries are done.
  6. When the fries are done place them on a paper towel lined plate.
  7. Add more salt, lime and chili powder as a garnish.
  8. Eat hot!
Yogurt Dipping Sauce
  1. Combine all ingredients and mix well.
  2. Dip fries into sauce
Recipe Notes

Some recipes call for boiling water, but I found ice cold water works best in this recipe to ensure that your batter does not have any lumps. If not eaten hot the outside can get soft
