MMMMMMMMM…..SPINACH BURGERS!
This weekend I taught my first cooking class! Cue the “yay’s!” I was so nervous to teach, but everything went off without a hitch!
My first class consisted of 3 amazing women, all of whom were vegetarian. As I created my menu for this 4 course meal I was left wondering, what should I make? In Indian culture there is a lot to explore in the vegetarian/vegan world. I wanted to teach my class to cook something healthy, light, easy and of course, fun! Thus the hara bhara burger was born.
This vegan burger consisting of spinach, peas and potatoes is sure to delight at your next dinner party. The prep is quite simple, the ingredients are few, but the taste packs a lot of punch! Serve with a light sauce, yogurt, or pickle and you are good to go!
The base of this burger is primarily spinach. Spinach can be a little temperamental if not treated right. Make sure to blanch the spinach and drain well. If it isn’t drained well the burger will omit too much water and ruin the burger. Feel free to add more spices to pack more of a punch!
- 2 cups blanched spinach
- 1 cup blanched peas
- 1/4 cup cilantro
- 1 boiled potato
- 3 green chilies
- 1 piece of ginger
- 1/2 tsp mango powder
- 3 tsp gram flour
- Oil to fry
- Chaat Masālā
- Blanch spinach and peas, drain and remove excess liquid from spinach.
- In a blender, blend spinach, cilantro, chilies, ginger and peas to a smooth paste.
- Mash potato in a bowl. Add green paste mixture. Mix well.
- Add salt, mango powder and gram flour. Mix well.
- Divide mix into equal parts and make round patties.
- Heat oil in pan and fry on medium flame, 8-10 minutes per side until golden brown.
- Sprinkle will chaat masālā, serve hot.
- Drain excess liquid from spinach well to avoid any moisture from releasing in the pan.
