Today I am going back to my #meatlessmonday roots, with this fresh and spring like dinner of zoodles and shrimp!
Honestly, I don’t want to deal with a zoodle maker, so I am super happy that Wegmans has them pre-made already!
How convenient is that?
Basically zoodles are spirialized zucchini noodles that make them look like spaghetti.
They are a great alternative to pasta and cook very quick.
What are some alternatives you use for pasta?
For this recipe I paired them with fresh shrimp, juicy bacon, greens and beautiful cherry tomatoes.
I love how tomatoes burst when they cook!
These zoodles are low and carb and are super satisfying.
I beef up the recipe with the edition of some chicken stock and heavy cream to give the dish that pasta sauce feel.

- 2 tsp. crushed red pepper
- ½ onion sliced thin sliced thin
- 1/3 cup heavy cream
- 1/2 cup chicken broth
- 1/2 pound shrimp peeled and deveined
- 1 lb zoodles
- 1 cup cherry tomatoes whole
- 2 cups spinach
- 3-4 strips of bacon cooked till crisp and diced
- 3 cloves garlic
- salt and pepper to taste
Ingredients

- In a pan over medium heat, add bacon fat or olive oil to a pan and saute onions for 3-4 minutes or until soft.
- Add garlic until fragrant. Add cooked bacon.
- Add chicken stock, let boil, simmer and then reduce down. Once reduced you will be left with a thick consistency of onions and garlic. Add in cream.
- Let cream come to a boil and add salt, pepper and crushed red pepper.
- Reduce heat slightly and stir.
- Add in zoodles. Stir.
- Let zoodles cook for 3-4 minutes until soft.
- Add in tomatoes. Cook down until some tomatoes burst. Stir.
- Add in shrimp and let cook for 2-3 minutes until opaque. Stir.
- Taste seasonings and adjust if needed.
- Add in spinach at the end and let cook until slightly wilted.
Enjoy this easy, low carb dinner any night of the week!

Prepared zoodles?! Wish I had known that. I have a spiral-thingie but it can be cumbersome. Lucky for you to have them at the grocery store! This dish looks really tasty!
