Ginger & Cayenne Sweet Potato Puree

I know, I know, some of you may be thinking that sweet potato puree is just baby food, but there is a reason why babies love it, and so do adults. The creamy, pudding like texture, the flagrant burnt orange color, and of course, the taste!

Ingredients
- 2 Sweet potatoes
- 2 tbsp butter
- ¼ cup milk
- ¼ cup orange juice
- 2 tsp fresh ginger
- 1 tsp cayenne
- Salt and pepper to taste
Instructions
- Peel, cut and boil potatoes until tender and easily pierced by a knife or fork, about 15-20 minutes.
- Drain.
- Puree in blender or food processor until slightly chunky.
- Season with salt and pepper.
- Add milk, orange juice, butter, ginger and cayenne, puree until smooth, but not runny.
- Serve warm.
