Today we are talking about chard. I love me some leafy greens! There are many different types of chard and is often used in Mediterranean cooking. It can be eaten raw, sautéed, blanched, steamed, seared, the list can go on. Pick your favorite way and cook it up. It is a great source of vitamin E and very low in fat.

Ingredients
  1. 2 tbsp olive oil
  2. 4 cloves of garlic, minced or sliced
  3. 2 tsp red pepper flakes
  4. 1 bunch of red chard, chopped
  5. 1 tsp red wine vinegar
  6. Salt and pepper to taste
Instructions
  1. Add oil to pan heated over medium heat.
  2. Add garlic and red pepper until the garlic becomes fragrant and golden brown (be sure not to burn the garlic).
  3. Remove the garlic and set aside.
  4. Add chard and sauté until soft, 4-5 minutes.
  5. Add salt and pepper to taste.
  6. Once leaves have wilted add the red wine vinegar.
  7. Add the garlic.
  8. Serve warm and enjoy!
