Hi!

How is everyone’s Monday going so far? Good? How about the weekend?

My going away party was this past weekend…super bittersweet, yet a really good time!

I will touch base more on moving later in the week.

So, over the past few weeks J and I have been eating more vegetarian/vegan, and I have been working out more, and I have to say, I feel great!

Don’t get me wrong, I love me some meat, but I also love veggies and I felt like we had been focusing a lot more on meats for protein.

BOMB POTATO & RED CABBAGE VEGAN BURGERS

Being Indian, I primarily ate a lot of vegetarian/vegan foods growing up. We didn’t have a restriction on meat, it’s just that Indian food is heavily plant-based.

On the other hand, Justin grew up with meat and potatoes. Complete opposites. 

Lucky for me he isn’t that picky at all. There are some things that he is “meh” on like bell peppers and eggplants, but for the most part he tries everything I make, including this fab veggie burger that I am going to share with you today!

My good friend Alex gives up meat every year for Lent, and when she came over last week to watch The Bachelor finale (I knew he was going to pick Vanessa!) I decided to make a vegan burger for dinner, complete with potatoes, red cabbage, numerous spices, homemade raita, here, and a side of asparagus French fries (will share recipe next week) and a sriracha honey-mayo dipping sauce.

The potato works great as a binder and is easy to mold. The cabbage helps give it a crunch and a nice char when put into a hot pan. The spices, of course, bring all the bold flavors to bring the whole burger together.

I realllllllly liked this burger, like a lot! Does anybody have any good vegan burger recipes that I can try? What binders do you use?

Sweet and Masala

Red Cabbage & Potato Vegan Burgers
Servings
Ingredients
  • ¼ tsp. garam masala
  • ½ tsp. coriander seeds
  • ½ tsp. cumin seeds
  • 1 tsp. chili powder
  • 1 tsp. mango powder
  • ½ head of red cabbage shredded
  • ½ a lemon juiced
  • 1 serrano pepper diced fine
  • 1 small onion diced into small pieces
  • 12 mixed Klondike petite potatoes peeled, boiled and halved.
  • Salt to taste
  • oil
Servings
Ingredients
  • ¼ tsp. garam masala

  • 12 mixed Klondike petite potatoes peeled, boiled and halved.
  • Salt to taste
  • oil
Instructions
  1. Combine all ingredients except oil in bowl and lightly mash.
  2. Divide the mixture into 4-6 balls.
  3. Flatten them into round shapes and place in fridge for an hour.
  4. Heat oil in a pan over medium heat and fry balls until they turn golden brown.
  5. Serve warm on a bun.
