Asparagus Fries + A Brief Boston Update

Hi Everyone!

It’s been awhile and I have missed you! 

I am finally in Boston…not really settled in and living out of a suitcase, butttttt that’s ok. 

It is pretty cold and its not quite the same as when I used to live here. Things and people have changed…but I will touch on that more next week. 

In the meantime…

Asparagus Fries! 

Last week I shared with you my bomb Vegan Burger recipe, here, and today I am sharing with you my vegetarian  friendly side, asparagus fries!

Ok, so, asparagus fries don’t quite compare to regular french fries ( I mean, what does), but they are really healthy and taste amazing! 

There is a beautiful crunch from the panko crumbs and the asparagus itself. 

It is a nice contrast from the softness of the potato in the burger.Asparagus Fries

These fries make a great mid-day snack and taste delicious with a sweet and spicy sriracha honey dipping sauce to dunk them in. 

These fried are guilt free and just plain good. 

I wish I was nomming on some right now!

Asparagus Fries
Fresh asparagus, baked to a golden crisp.
Servings
Ingredients
  • 1/4 cup Parmesan cheese trimmed
  • 1/2 cup flour
  • 3/4 cup panko breadcrumbs
  • 2 eggs beaten
  • salt and pepper to taste

Instructions
  1. Dredge asparagus in flour. Dip into egg, then the panko seasoned with the cheese, salt and pepper. Pre-heat the oven to 425 degrees and place the asparagus on a baking sheet and bake for 7-12 minutes until golden brown.
