Oh, glorious Monday, we meet again.

How was your weekend? Anything fun?

I treated myself to an all-day beauty Saturday, complete with hair, nails and a wax.

Have to stay fresh, you know?

anyways.

This Monday you are all in for a special treat, like literally.

A few weeks ago I told you guys all about that fun blogger brunch that I went to, here, featuring 6 talented Boston food bloggers and Autumn Glory Apples.Winter Apple Gratin

We all created unique dishes with the incredibly delicious Cinnamon, Caramel apples from the Domex Farms in central Washington.

Let me tell you something….I am a total apple snob.

I am usually a Granny Smith or Red Delicious girl….and that’s about it. Every now and again I can throw a Fuji in there and be OK…I know…totally weird that I am so particular about my apples…but hey. I like what I like. Nothing wrong with that!

anyways.

When I joined the blogger brunch I had never heard of the Autumn Glory Apple, which is pretty sad for me because I have been missing out on these sweet, crisp, firm apples and that is SHAME.

Autumn Glory’s fruit have a super firm flesh with LOTS of hints of cinnamon and notes of caramel.

The first time I bit into one of these apples I was legit shocked at the flavor. A lot of companies advertise things as tasting some type of way and rarely follow through, but these Autumn Glory Apples did.not.disappoint! (Where is the clap emoji when you need it?)

Winter Apple Gratin

My original recipe using their apples was a Savory Baked Apple, here, stuffed with juicy pork and lots of fresh herbs. Since the apple is super versatile in flavors it makes it V easy to pair it with savory or sweet dishes + you can use the apples in so many different ways!

Since I had already made a savory dish with the scrumptious apples I decided to make a sweet treat this time!

I am sure you have noticed I don’t really post dessert type recipes…but that’s only because I don’t want to be eating sweets all the time!

I love, love, love desserts, and a food blogger you tend to eat your blog post creations.

HOWEVER, these apples deserve the exception.

Winter Apple Gratin

This recipe is complete in less than 15 minutes and brings out all of those cinnamony, carmely (spelling? Hehe) notes from the apples.

Cook them down in a pan with some brown sugar a few other spices and then top in a custard bath….oh yeah! You can wipe that drool now.

The best part about this recipe is you don’t even have to like custard! Omit the custard and you have yourself some enchanting warm apples.

Winter Apple Gratin
A sweet, spicy and spiked warm apple dessert with a simple custard.
Servings
Ingredients
  • 2 Autumn Glory Sweet Cinnamon Carmel Apples peeled cored and cut into 1/8th’s
  • 3 tbsp. white granulated sugar
  • 2 tbsp. butter
  • 2 tbsp. milk
  • 1 tbsp. Brown sugar
  • 1 -2 tbsp. bourbon of choice depends on how much you want it spiked!
  • 1 tsp. vanilla extract
  • 1/8 tsp. ground cardamom
  • 1/8 tsp. ground ginger
  • 3 egg yolks

Instructions
  1. Melt butter in large pan or cast-iron skillet over medium heat.
  2. Add apple wedges in a single layer and sprinkle with brown sugar, cardamom and ginger.
  3. Continue to cook until both sides have browned, about 4-5 minutes per side.
  4. Reduce heat down to low, stir and cover. Continue to cook for 3 minutes or until tender.
  5. Uncover and cook over high heat until juices have evaporated and the apples are glazed with the brown sugar mixed and browned.
  6. In a pie dish, or individual gratin dishes, spread the apples in a single layer (4-5 slice per dish).
  7. In a saucepan whisk together egg yolks, sugar and bourbon over low heat. Do not let it boil. As it thickens add in the milk. Continue to whisk until thickened, about 2 minutes.
  8. Spoon over apples.
  9. Place under broil for 30 seconds to brown custard. Serve with ice cream.

I love apples! My favorites are Fuji and Opal and the occasional Pink Lady. Apple desserts are some of my favs as well. This one looks amazing and the best part is that it is so quick and easy to make. This sounds so yummy for the winter and I may attempt it this holiday season! This seems delicious! I may try some tomorrow as I have lots of apples around and normally don’t eat them much but cooked this way everyone will love it!
