It’s a brand new week y’all! 

I like to keep these food posts short, sweet and too the point. 

After all, you’re hungry, right? 

As you know I am super into quick, fast meals.

When I am hungry while cooking it is the worst! So the best way to minimize that hanger is to make a meal that is satisfying and can be made in a short period of time.

Today I a sharing with you my salmon stacker recipe. 

This recipe was born out of sort of necessity yet creativity.

Baked Salmon Stacker with mushrooms, potatoes and kale

 I had a beautiful piece of Atlantic salmon along with a bunch of fresh veggies in the fridge and didn’t want to do the traditional foil packet dinner.

(I love salmon…I think I got it from my mom since she loves it too. 

It’s her go-to-dish at most restaurants.)

So, instead, I decided to encrust the salmon and lay it on a bed of fresh veggies and pop it right into the over together!

So many times when people read my recipes they are like ‘ I can’t make this!’, but yes! You can!

I promise this is SO easy! 

Baked Salmon Stacker with mushrooms, potatoes and kale

Salmon Stacker
Delicious Parmesan encrusted salmon on top of a bed of freshly roasted veggies.
Cook Time 20 minutes
Servings
Ingredients
  • 1/4 cup Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 cloves garlic minced
  • 1 tsp. chili powder
  • 1 tsp. oregano
  • 10-12 mini mixed Klondike petite potatoes sliced thin
  • 1/2 cup mushrooms sliced thin
  • 1 cup kale chopped
  • 1 lemon juiced
  • 2 tbsp. butter melted
  • salt and pepper to taste
  • 4 salmon filets
Cook Time 20 minutes

  • 1/4 cup Parmesan cheese

  • 1 tsp. oregano
  • 10-12 mini mixed Klondike petite potatoes sliced thin
  • 1/2 cup mushrooms sliced thin
  • 1 cup kale chopped
  • 1 lemon juiced
  • 2 tbsp. butter melted
  • salt and pepper to taste
  • 4 salmon filets
Instructions
  1. Pat salmon dry to remove moisture. Set aside and pre-heat oven to 400 degrees.
  2. Using a mandolin or sharp knife, slice potatoes into 1/2-1 inch slices. Slice mushrooms. Chop Kale.
  3. In a small bowl combine panko, cheese, chili powder, oregano, garlic, salt and pepper.
  4. Mix until combined.
  5. Melt butter and add juiced lemon. Stir well to combine. Brush the mixture onto the salmon filets. Reserve some of the mixture for the baking dish.
  6. Place salmon in mixture skin side up and press down to ensure all areas of the salmon are encrusted.
  7. In a small baking dish grease the pan with the leftover butter/lemon mixture.
  8. Add the sliced potatoes in an even layer. Then add mushrooms, then kale.
  9. Place encrusted salmon on top.
  10. Place in oven for 20 minutes until salmon and potatoes are cooked through.
Recipe Notes

Make sure the potatoes are sliced thin enough to roast during the 20 minute period. 

Check on the salmon during cooking to make sure the crust does not burn and is golden brown.
